Mairéad Nic Eoin's Meal
Chicken Maryland
Ingredients:
- 8 Chicken fillets
- 1 egg
- Breadcrumbs
- Salt
- Pepper
- Mixed herbs
- 1 Onion
- Butter
- 6 Carrots
- 6 cups of Peas
- medium Potatoes
- 2 tablespoons of gravy powder
Method:
- Dunk
the chicken fillets in egg first, and then coat them in the breadcrumbs.
- Place
on a greased tin and cook in the oven at 200C for 30 minutes.
- To
make the stuffing, melt a block of butter.
- Mix
the salt, pepper, mixed herbs and diced onion into the melted butter.
- Boil
the carrots and peas and the potatoes in hot water.
- Mash
the potatoes with a little butter and salt.
- Mix
into the water in which you boiled the vegetables, 2 tablespoons of gravy
powder to make the sauce.
- Serve
the chicken on a plate with the potatoes and vegetables.
Dessert
Orange Flan
Ingredients:
- 4 ounces flour
- 4 ounces caster sugar
- 4 eggs
- Vanilla essence
- Can of mandarins (drained)
- ½ pint of cream
Method:
- Beat
the sugar, eggs and vanilla essence together.
- Fold
the mixture into the flour and mix.
- Pour
the mixture into the tin and bake in the oven at 180C for 20 minutes.
- Remove
from the oven and allow to cool.
- Beat
the cream and spread on top of the flan.
- Put
a layer of mandarins on top of the cream.
- Serve
with cream or ice cream.
