Mairéad Nic Eoin's Meal

Chicken Maryland

Ingredients:

  • 8 Chicken fillets
  • 1 egg
  • Breadcrumbs
  • Salt
  • Pepper
  • Mixed herbs
  • 1 Onion
  • Butter
  • 6 Carrots
  • 6 cups of Peas
  • medium Potatoes
  • 2 tablespoons of gravy powder

Method:

  1. Dunk the chicken fillets in egg first, and then coat them in the breadcrumbs.
  2. Place on a greased tin and cook in the oven at 200C for 30 minutes.
  3. To make the stuffing, melt a block of butter.
  4. Mix the salt, pepper, mixed herbs and diced onion into the melted butter.
  5. Boil the carrots and peas and the potatoes in hot water.
  6. Mash the potatoes with a little butter and salt.
  7. Mix into the water in which you boiled the vegetables, 2 tablespoons of gravy powder to make the sauce.
  8. Serve the chicken on a plate with the potatoes and vegetables.

 

Dessert

Orange Flan

Ingredients:

  • 4 ounces flour
  • 4 ounces caster sugar
  • 4 eggs
  • Vanilla essence
  • Can of mandarins (drained)
  • ½ pint of cream

 

Method:

  1. Beat the sugar, eggs and vanilla essence together.
  2. Fold the mixture into the flour and mix.
  3. Pour the mixture into the tin and bake in the oven at 180C for 20 minutes.
  4. Remove from the oven and allow to cool.
  5. Beat the cream and spread on top of the flan.
  6. Put a layer of mandarins on top of the cream.
  7. Serve with cream or ice cream.
