Siobhán Tim Ní Chonghaile's Meal

Shepherd’s Pie

Ingredients

  • 500g minced meat
  • 1 onion       
  • 2 carrots
  • 1 tablespoon of flour
  • 250ml stock
  • 50g sweet corn
  • 50g peas
  • 1 tablespoon of bisto
  • 600g potatoes
  • 15g butter
  • Drop of milk
  • Salt and pepper

Method

  1. Place the potatoes in a pot of boiling water and cook for 30 minutes.
  2. Fry the minced meat and add the onion and other vegetables.
  3. Mix in the flour and all to cook for a minute.
  4. Mix in the stock and then the bisto. Leave to simmer for 5-10 minutes.
  5. Drain the water from the potatoes and mash them with the butter, milk and salt and pepper.
  6. Place the meat in a deep casserole dish and then layer the potatoes on top of it, smoothing it out.
  7. Cook in the oven at 180C for 40 minutes.

Dessert

Apple Crumble

Ingredients

  • 500g apples
  • 2 tablespoons of sugar
  • 150g flour
  • 50g white sugar
  • 75g margarine

Method

  1. Sieve the flour into a bowl.
  2. Rub the margarine into the flour using your fingers and the mix in the 150g of sugar.
  3. Wash the apples and cut into slices into the dish.
  4. Sprinkle the rest of the sugar on the apples. 
  5. Spread the flour mixture on top of the apples.
  6. Bake in the oven at 180C for 30 minutes
