Léan Bán Breathnach's Meal

Pasta Carbonara and Garlic Bread

Ingredients:

  • 1 tablespoon of olive oil
  • 1 garlic clove (diced)
  • 450g spaghetti
  • 250g bacon (diced)
  • 2 eggs (small)
  • 4 tablespoons of fresh cream
  • 125g parmesan cheese (grated)
  • 1 tablespoon of parsley
  • salt and pepper

Garlic Bread

  • 1 long loaf of bread
  • 2 cloves of garlic (finely diced)
  • 113g unsalted butter

Method:

  1. Cook the spaghetti in a large saucepan of boiling water, with a little salt, for 10-12 minutes.
  2. Fry the garlic in a little oil for a few minutes.
  3. Then fry the bacon bits until they are crispy, about 6-7 minutes.
  4. When the bacon is fried, dry the oil from it with kitchen paper.
  5. In a large bowl, beat the eggs, it should be thick, but don’t scramble them.
  6. Add the pepper and half the cheese to the eggs.
  7. Take the spaghetti from the heat and drain the water from it.
  8. Add the bacon and the egg mixture to the pasta.
  9. Mix the egg mixture throught the spaghetti , making sure  the egg is cooked through.
  10. Serve the pasta with the parsley and some Parmesan on top.

Garlic Bread

  1.  Pre heat the oven to 200°C.
  2. Cut the loaf of bread into slices.
  3. In a bowl, mix the butter and the garlic together until you have a spread.
  4. Spread the mixture on the bread slices.
  5. Bake in the oven for 12-15 minutes.
  6. Allow to cool before serving.

Dessert

Chocolate Squares with Strawberries and Chocolate Sauce

Ingredients:

  • 5 nougat chocolate bars (mars bars)
  • 113g butter
  • 230g Rice Krispies

Chocolate sauce

  • 2 bars of chocolate
  • 1 tablespoon butter
  • 125ml fresh cream

Decoration

  • strawberries
  • icing sugar

Method:

  1. Break up the chocolate bars and leave to one side.
  2. Melt the butter on a low heat.
  3. Add ¾ of the chocolate to the melted milk and melt it on a low heat for a few minutes.
  4. In a large bowl, mix the chocolate mixture into the Rice Krispies.
  5. Mix well and quickly so the chocolate doesn’t set.
  6. Spread the mixture into a baking tin. Smooth it out evenly.
  7. Use the other ¼ of the melted chocolate to cover the Rice Krispies.
  8. Allow the chocolate to set for an hour.
  9. Cut into squares.
  10. Cut the strawberries in halves.
  11. Using a sieve, decorate the square with some icing sugar.
  12. Decorate with the strawberries.

Chocolate Sauce

  1. Melt the butter, chocolate and cream on a low heat.
  2. Stir it constantly until it thickens.
  3. Serve it lukewarm.
