Niamh Malone's Meal

Fresh Salmon with mixed veg and potatoes with hollandaise sauce

Ingredients:

  • Potatoes
  • Carrots
  • Asparagus
  • Salmon
  • Butter
  • Lemon juice
  • Hollandaise sauce
  • Milk

Method:

  1. Prepare all the vegetables. Place the potatoes in a pot of water and heat.
  2. Squeeze the lemon juice over the fillets of salmon.
  3. Wrap the salmon in tin foil and place in an oven at 160°C for 15 minutes. 
  4. When the potatoes begin to boil, turn the heat on under the vegetables.
  5. Heat the pre-made hollandaise sauce over a low heat, and mix in one pint of milk, to thicken the sauce.
  6. After 15 minutes remove the salmon from the oven.
  7. Mash the potatoes with some butter and salt.
  8. Serve the salmon with the hollandaise sauce with the vegetables and potatoes.

Dessert

Fruit cheesecake

Ingredients:

  • 175g (6oz) Digestive Biscuits
  • 75g (3oz) Butter
  • 175g (6oz) mixed berries
  • 450g (16oz) creamed cheese
  • 150g (5oz) sugar
  • 1 tsp vanilla extract
  • 4 eggs

To bake:
24cm (91/2in) tin

Method:

  1. Turn on the oven at 180°C.
  2. Melt the butter.
  3. Break the biscuits into fine crumbs and mix into the melted butter.
  4. Spread the biscuit crumbs into the base of the tin.
  5. Spread a layer of berries over the biscuit base.
  6. Place in the fridge to set.
  7. Beat the cheese, sugar, vanilla extract and eggs in a large bowl until you get a smooth mixture.
  8. Pour the mixture over the fruit and bake in the oven for 40 minutes or until the cheesecake turns golden brown.
  9. Allow to cool and serve with a little cream.
