Niamh Malone's Meal
Fresh Salmon with mixed veg and
potatoes with hollandaise sauce
Ingredients:
- Potatoes
- Carrots
- Asparagus
- Salmon
- Butter
- Lemon juice
- Hollandaise sauce
- Milk
Method:
- Prepare all the vegetables. Place the potatoes in a
pot of water and heat.
- Squeeze the lemon juice over the fillets of salmon.
- Wrap the salmon in tin foil and place in an oven at
160°C for 15 minutes.
- When the potatoes begin to boil, turn the heat on
under the vegetables.
- Heat the pre-made hollandaise sauce over a low
heat, and mix in one pint of milk, to thicken the sauce.
- After 15 minutes remove the salmon from the oven.
- Mash the potatoes with some butter and salt.
- Serve the salmon with the hollandaise sauce with
the vegetables and potatoes.
Dessert
Fruit cheesecake
Ingredients:
- 175g (6oz) Digestive Biscuits
- 75g (3oz) Butter
- 175g (6oz) mixed berries
- 450g (16oz) creamed cheese
- 150g (5oz) sugar
- 1 tsp vanilla extract
- 4 eggs
To bake:
24cm (91/2in) tin
Method:
- Turn on the oven at
180°C.
- Melt the butter.
- Break the biscuits into fine crumbs and mix into the
melted butter.
- Spread the biscuit
crumbs into the base of the
tin.
- Spread a layer of berries over the biscuit
base.
- Place in the fridge to set.
- Beat the cheese, sugar, vanilla extract and
eggs in a large bowl until you get a smooth mixture.
- Pour the mixture over the fruit and bake in
the oven for 40 minutes or until the cheesecake turns golden brown.
- Allow to cool and serve
with a little cream.
