Máirín Ní Threasaigh's Meal
Meatballs with
tomato sauce and spaghetti
Ingredients:
- 400g minced beef
- 1 onion
- salt and pepper
- oregano
- ketchup
- 1 egg
- 1.5 oz breadcrumbs
- Oil
Traditional Tomato Sauce
- 1 onion
- 1 garlic clove (diced)
- 1 tin of tomatoes
- mixed herbs
- 1 bay leaf
- 1 tablespoon of oil
- 1 tablespoon of tomato purée
- 1 pint of beef stock
Method:
- Mix all the ingredients together in a
large bowl.
- Shape the mixture into small
meatballs.
- Seal the meatballs in a hot frying
pan.
- To make the sauce, in another pan,
fry the onion, garlic, herbs, bay leaf and stock together.
- Add the tin of tomatoes and tomato
purée.
- Stir and simmer for 15-20 minutes.
- When the meatballs are browned, place
them in a dish and pour the tomato sauce over them.
- Cook in the oven at 180C for 30
minutes.
- To cook the pasta, boil it in hot
water for 8-10 minutes. Add some oil to the water to stop the pasta sticking.
- Serve the meatballs on top of the
pasta.
Dessert
Sundae
with chocolate sauce and biscuits
Ingredients:
- 250ml cream
- 1oz butter
- 1tablespoon
of golden syrup
- 200g dark
chocolate
- Ice cream
- Oreo
biscuits
- Strawberries
Method:
- Put the
cream, butter, syrup and chocolate in a saucepan.
- Mix
together over a low heat until melted and the mixture is smooth.
- Pour the
hot sauce over a bowl of ice cream.
- Break up
the Oreo biscuits and sprinkle over the sauce.
- Decorate
with strawberries and serve with a little whipped cream.
