Máirín Ní Threasaigh's Meal

Meatballs with tomato sauce and spaghetti

Ingredients:

  • 400g minced beef
  • 1 onion
  • salt and pepper
  • oregano
  • ketchup
  • 1 egg
  • 1.5 oz breadcrumbs
  • Oil

Traditional Tomato Sauce

  • 1 onion
  • 1 garlic clove (diced)
  • 1 tin of tomatoes
  • mixed herbs
  • 1 bay leaf
  • 1 tablespoon of oil
  • 1 tablespoon of tomato purée
  • 1 pint of beef stock

 

Method:

    1. Mix all the ingredients together in a large bowl.
    2. Shape the mixture into small meatballs.
    3. Seal the meatballs in a hot frying pan.
    4. To make the sauce, in another pan, fry the onion, garlic, herbs, bay leaf and stock together.
    5. Add the tin of tomatoes and tomato purée.
    6. Stir and simmer for 15-20 minutes.
    7. When the meatballs are browned, place them in a dish and pour the tomato sauce over them.
    8. Cook in the oven at 180C for 30 minutes.
    9. To cook the pasta, boil it in hot water for 8-10 minutes. Add some oil to the water to stop the pasta sticking.
    10. Serve the meatballs on top of the pasta.

       

      Dessert

      Sundae with chocolate sauce and biscuits

      Ingredients:

      • 250ml cream
      • 1oz butter
      • 1tablespoon of golden syrup
      • 200g dark chocolate
      • Ice cream
      • Oreo biscuits
      • Strawberries

       

      Method:

        1. Put the cream, butter, syrup and chocolate in a saucepan.
        2. Mix together over a low heat until melted and the mixture is smooth.
        3. Pour the hot sauce over a bowl of ice cream.
        4. Break up the Oreo biscuits and sprinkle over the sauce.
        5. Decorate with strawberries and serve with a little whipped cream.
